One Bistro Began With A Simple Question…

What if everyone had a place at the table—regardless of their ability to pay?

 

In 2012, Chef Robert Adamson and his wife, Kim, opened a café in Miamisburg, Ohio, to turn that question into a reality. What they built wasn’t just a restaurant—it was a community.

Now located in Xenia, we carry on that mission by serving handcrafted, affordable meals in a space where everyone belongs. Whether you come to eat, give, or serve—you’re part of something bigger.

The Concept

How It Works

At One Bistro, our mission and model go hand in hand.

That’s why we use a Pay What You Can approach for every meal we serve.

Here’s what that means:

1. All menu prices are suggested.

2. You can pay what you can afford, pay the full amount, or pay a little extra to help feed someone else.

3. If you can’t pay, you’re invited to volunteer your time in exchange for a meal.

This simple concept creates dignity, not dependency—and makes space for everyone to be part of the solution.

What is One Bistro?

We are a faith-based nonprofit Biznistry® serving healthy, affordable meals to everyone—regardless of their ability to pay. Our mission is to serve with dignity, create connection, and provide purpose—one plate at a time.

What is Food Insecurity?

Hunger is a physical feeling. Food insecurity is a household’s lack of consistent access to nutritious, affordable food.

What can I expect when I come to One Bistro?

Expect fresh, handcrafted meals, a café-style atmosphere, and a welcoming place where everyone is treated with dignity. Whether it’s lunch, Community Meal, or takeout, you’ll leave feeling full in every way.

Is this a soup kitchen?

Not at all. We’re a community café serving high-quality, chef-inspired food—made fresh, never out of a can. It’s real food, served with real care.

Do I have to “Pay It Forward?"

Nope. Paying it forward is totally optional. Whether you pay the full price, more, less, or volunteer instead, we’re just glad you’re here.

If I can’t afford a meal, will anyone know?

No. Everyone is treated the same—with respect and kindness. Payment is private, including volunteering for your meal.

Are you providing handouts?

We provide a hand up, not a handout. If someone can’t pay, they’re invited to give their time and serve in exchange for a fresh, nutritious meal.

Where do you get your ingredients?

We proudly source ingredients from local farms and suppliers. Many of our vegetables come from a hydroponic garden, and local growers help us keep meals fresh and affordable.

How do I volunteer?

Sign up online or stop by. You can help with food prep, serving, cleaning, or hospitality. We welcome individuals, families, church groups, and companies. First-timers review a Volunteer Manual and sign a Volunteer Agreement.

What will I do as a volunteer?

Typical tasks include:

  • Taking orders
  • Wrapping silverware
  • Bussing/sanitizing tables
  • Restocking and cleaning
  • Washing dishes

No experience is required—just a servant’s heart.

How do I make a donation?

You can:

  • Donate online (one-time or recurring)
  • Mail a check
  • Add extra to your café bill
  • Buy a Meal Token to hand out
  • Support through Kroger Community
  • Rewards, and Dorothy Lane Market

How do I become a sponsor?

Sponsor a table for $250/month or a Community Meal for $250. Ministry Meal sponsorships are also available. You’ll be recognized in the café and on social media.

How can I get your Form 990?

Do you accept in-kind donations?

Yes! We welcome kitchen supplies, maintenance help, cleaning materials, and more. Contact us to ask about current needs.

How does the Pay What You Can model work?

Our meals have a suggested price of $6–$9. Guests may pay the full amount, more to “pay it forward,” less if needed, or volunteer in exchange for a meal.

What should I expect when I visit?

A warm, café-style dining experience with handcrafted meals, a friendly team, and a sense of community. You’ll feel right at home.
